The Chimayo Pepper has been farmed in the Chimayo valley of New Mexico in the USA for over 300 years but was brought to the verge of extinction in recent years. New Mexico has decided that it is important to save this heritage chilli. Lavish, large green ripening to red peppers grow on robust 75cm bushes.
The complex and luxurious taste of the Chimayo Pepper puts in a class of its own, sporting the heat of a jalapeno with notes of smokiness, fruitiness and provocative chocolate goodness. These endangered gems can be converted to a fabulous chilli powder or great added to sauces.
